The coffee is carefully picked and sorted for ripeness. The coffee is first fermented in cherry for 19-22 hours before depulping without water. It is then allowed a secondary fermentation in mucilage for 35 hours before fully washing the coffee and mechanically drying it to a final moisture of 10.5%.
